Marinated Chicken in Garlic,Cumin and Calamansi Pockets ♥

I am so determined  to once again lose weight, so I jog, I do Zumba Exhilarate, Hip Hop Abs and Combat Workout... hahahaha do I sound like an exercise addict? Anyways exercise will not gonna work if you won't include proper meal planning. Now I have the exhilarate pack that includes recipes of the food that you'll need to eat for 10 days. However, some of the ingredients are not available here or so expensive. So, here's what I did. I either experiment or reinvent the recipes based on the exhilarate meal plan :)

Marinated Chicken in Cumin and Calamansi Pockets




What you need for the recipe:

For the Marinated Chicken
Marinade:
10 calamansi (juiced and seeded, can use 2 lemon instead of calamansi)
1 tbsp of cumin powder
pinch of salt
1 cloves of garlic (chopped)
4 cuts of chicken breast skin and bone removed

Procedure:
  • Mix everything together and marinade for about 3 hours. 
  • Preheat non stick skillet on the stove top. Fry the chickens, turning occasionally to avoid burnt meat.
  • Set aside the cooked chicken meat for later use.

For the pita pockets, you can either buy at the nearest grocery store or make your own "no yeast" pita/tortilla. Click here

Now here's what you got to do with those meat and pita breads.

You will need:
1 ripe avocado, sliced
1 ripe mango, sliced
3 tomatoes, seeded and cut into small cubes
1 big white onion, cut into small cubes
3 green chillis, sliced thinly
4 marinated chicken,sliced (you can also use beef and pork if you want)
some mayonnaise and hot sauce (optional)


Procedure:

Cut the pita into halves, open the pockets and put everything inside according to how much of each ingredients you like. Put some mayonnaise and hot sauce for additional taste. Though I prefer mine without the mayonnaise. A little hot sauce will do though. :)

  1. Looks delicious. I love reinventing recipes to fit what I have on hand or what I like to eat. On a side note, have you heard of Fast Metabolism Diet? If not you should totally check it out. It is a delicious way to eat and it makes sense. I finished it up and am now just living the principles as a lifestyle. It is totally do-able for my entire life! I love it! (just my opinion, not a commercial). I will try this tomorrow, I'm looking for new healthy recipes. I don't know what calamansi is, so I'll use the lemon unless I can find the calamansi at the store.

    1. I'll check that one? do you have it in your blog? I think calamansi is just available in tropical countries, not sure though. It looks like a small lime. I'd love to try your recipes too, if you don't mind :)
